Keto chicken salad is a great high fat low carb meal that's filling and easy to make. This keto chicken salad has blueberries for a little sweetness and hemp seeds for some extra protein!
Chop the chicken, celery, and cashews and add them to a mixing bowl.
Add in the hemp seeds, salt, garlic powder, onion powder, and mayo.
Mix until everthing is evenly coated in the mayo.
Gently fold in the blueberries and mix until they're evenly distributed.
Keep refridgerated and eat within a few days.
Notes
If you don't want to make my homemade mayo, I recommend Chosen Foods Mayo, or Primal Kitchen Mayo.The mayo will soften the cashews over time. If making this ahead of time, I suggest adding the chopped cashews in right before serving.
