Chocolate covered rice cakes are the perfect snack! They're sweet and salty and easy to make at home. Switch up the flavor by adding different toppings or nut butters.
Make a double boiler by adding 2 inches of water to a small pot, and placing a glass or metal bowl on top. The bowl should not be touching the water.**
Add the chocolate chips to the bowl.
Bring the water to a boil, then turn it down to a simmer. Stir the choclate chips until all melted.
Once the chocoalte is melted, carefully remove it from the heat and let stand for one minute.
Place the rice cake into the chocoalte. Use a spoon to coat the rice cake in the melted chocolate. Once coated, hold the rice with two fingers, and use the back of the spoon to scrape off any excess chocolate. You just need a thin layer.
Place the chocoalte covered rice cakes on a piece of wax paper and allow the chocolate to harden before eating.
Store in an airtight container for up to 1 week.
