These almond flour chocolate cookies are a rich indulgent chocoately treat. They're easy to make, gluten free, and dairy free!

Ingredients

blanched almond flour

raw cocao powder
can sub cocoa powder
1/4
cup
coconut sugar
1/4
teaspoon
sea salt
1/4
teaspoon
baking soda
1/4
cup
pure maple syrup
1
egg yolk
1
teaspoon
vanilla extract
1
tablespoon
avocado oil
can substitute liquid oil of choice
Instructions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Add the almond flour, baking soda, sea salt, coconut sugar, and cocoa powder to a mixing bowl and whisk until combined.
Add in the maple syrup, egg yolk, vanilla extract and oil. Mix until a dough is formed.
Add in the chocolate chips if using and mix.
Using a 1.5 tablespoon cookie scoop, scoop the dough onto the lined baking sheet.
Gently flatten the tops of the cookies.
Bake for 9-11 minutes. All ovens vary and the time will change depending on how much you flattened the cookies.
When the edges are firm to the touch, remove the cookies from the oven and leave them on the pan to cool.
Store any leftover cookies in an airtight container.
Notes
Note that all baked goods made from almond flour - especially cookies - will soften over time.
