This Tortilla Chip Dip has been in the family for years. We call it “hot lava” and it’s full of all the Mexican flavors you know and love but is so simple to make.
It’s kind of like a cheese dip, kind of like a bean dip, but it’s made with ground beef and salsa to really amp up the flavors.

I struggled with what to call this…it’s not really a taco dip, it’s not quite as thick as a buffalo chicken dip…is it a dip? Is it an appetizer? A meal?
I guess what I do know is that it’s delicious and any gathering I take this to, people are always asking for the recipe.
This chip dip recipe is one of those dump and stir recipes. The only real preparation that takes some effort is the browning of the ground beef.

Tortilla Chip Dip – Ingredients
Ground beef
Garlic
Salsa
Sour Cream
Refried beans
Cheese
Onion powder
Salt
Pepper
Tortilla Chip Dip – How To Make
First, in a large pot, brown the ground beef and drain off the excess fat.
Next, add the salt, pepper, onion powder, and minced garlic to the beef.
Then, add in the salsa, beans, and sour cream. Cook over medium heat until it comes together evenly.
Finally, add in the shredded cheese. This is definitely not a low fat meal. 🙂 It will take about 10-15 minutes for all the cheese to melt. You know the dip is ready when you can stir it without any cheese strings sticking to the spoon.
Serve hot with tortilla chips and any toppings you’d like.
Tortilla Chip Dip – Tips
This meal is perfect for game day! It could be used as a side/appetizer or as a meal.
Our family enjoys this as is and we dip our chips straight into it. However, you could totally top it with lettuce, avocado, olives, or anything else you’d like.
This meal can be made in no time at all and is a great recipe to keep on hand since it uses mostly pantry staples. Who says dinner needs to be complicated? Enjoy!

Ingredients
- 1 pound ground beef
- 1/8 teaspoon pepper
- 1/8 teaspoon sea salt
- 1/8 teaspoon onion powder
- 2 cloves garlic minced
- 2 16 oz jars of salsa spice level of choice
- 15 oz can refried beans
- 1 1/2 cups sour cream
- 3 cups cheddar cheese grated, can substitute bagged shredded cheese
- tortilla chips
- toppings of choice (shredded lettuce, avocado, olives) optional
Instructions
- In a large pot, brown the ground beef and drain off the excess fat.
- Once the beef is cooked, add in the salt, pepper, onion powder, and minced garlic and stir till combined.
- Add in the salsa, sour cream, and beans, and combine over medium heat until thick and creamy.
- Add in the grated cheese and stir over medium heat until completely melted.
- Serve hot with tortilla chips and optional toppings.
