This sautéed asparagus recipe is a healthy side dish that’s quick to make. Asparagus goes with just about anything and this easy skillet asparagus with ghee and garlic is no exception!

How to trim asparagus
First, to prepare the asparagus, you’ll want to gently rinse the stalks and pat them dry. At this point, you’ll need to trim off an inch or two from the bottom of the stalk.
The reason for this is twofold. The ends can be bitter tasting, and they also tend to be thick and fibrous which makes them unpleasant to eat.
One way to figure out where to cut the asparagus is to gently bend a stalk until it snaps. You can use this trimmed asparagus as a guide, to cut the rest of the asparagus in your bunch.
Alternately, you can just eyeball an inch or two from the bottom of the asparagus, and cut there. This is what I typically do and it works well for me.
How to cook asparagus on the stove (sautéed asparagus)
Making this sautéed asparagus recipe in a pan couldn’t be easier. I actually prefer it over roasting – which is sayin’ somethin’ because roasted veggies are my love language. Here’s how to sauté asparagus on the stove:
- Place the ghee into a large skillet over medium heat.
- Cut the washed and trimmed asparagus into bite size pieces. About an inch long or so.
- Add them to the pan with the salt, and stir with a wooden spoon every few minutes to ensure they don’t stick to the pan and can cook evenly.
- While the asparagus is cooking in the pan, mince the garlic.
- Sauté the asparagus for 10-15 min, depending on how thick your asparagus is.
- When the asparagus in fork tender (you’re able to poke a fork in it easily) add in the minced garlic, lower the heat to medium low, and stir.
- Cook for 2-3 minutes or until the garlic is fragrant, and it’s ready to serve.

Sautéed Asparagus with Ghee and Garlic
Ingredients
- 1 pound asparagus
- 2 tablespoons ghee can replace with butter or oil
- 3-4 cloves garlic I like it extra garlicky so I use 4
- 1/4 teaspoon sea salt or more to taste
- pinch ground pepper optional
Instructions
- Prepare the asparagus by gently rinsing it and patting it dry. Trim off and discard the bottom 2 inches of the asparagus stalks.
- Add the ghee to a large skillet over medium heat.
- Cut the trimmed asparagus into 1 inch bite size pieces.
- Add the asparagus and salt to the pan, stirring every few minutes to ensure they cook evenly and don't stick to the pan.
- While the asparagus is cooking in the pan, mince the garlic.
- Sauté the asparagus for 10-15 min, depending on how thick your asparagus is. When the asparagus in fork tender, add in the minced garlic, lower the heat to medium low, and stir. Cook for 2-3 minutes or until the garlic is fragrant, and it's ready to serve.
