These pumpkin spice energy balls are the perfect fall snack.  They’re so easy to make (don’t you LOVE easy!) and full of fall flavors like pecans, pumpkin spice, and maple – oh my!

These delectable little no bake balls would be perfect for school lunches, or a midday snack, and are even sweet enough to be served as a dessert.  I love eating them straight from the freezer, but they can also be eaten from the fridge, or as is.

Ingredients in Pumpkin Spice Energy Balls

How to make Pumpkin Spice Energy Balls

  • First, whip out your handy dandy food processor and insert the metal “s” blade.
  • Add in the pecans, and pulse a few times to break them down a bit before adding in the other ingredients.
  • Next, add in the salt, pumpkin pie spice, oats, oil, and maple syrup.
  • Mix in the food processor until well combined and the mixture forms a dough.
  • Using a cookie scoop, scoop the dough onto a parchment lined baking sheet.
  • Roll the dough into balls using your hands, and place the baking sheet in the freezer for at least 30 minutes.
  • Store the pumpkin spice energy balls in an air-tight container in the freezer.

Pumpkin Spice Energy Balls (Paleo, Vegan, GF, DF)

These pumpkin spice energy balls are the perfect fall snack.  They're so easy to make and full of fall flavors like pecans, pumpkin spice, and maple! They're also paleo, gluten free, dairy free, and vegan.
Prep Time 5 minutes
Freezing Time 30 minutes
Total Time 35 minutes

  • Line a baking sheet with parchment paper and set aside.
  • Insert the metal "s" blade into your food processor.
  • Add in the pecans, and pulse a few times to break them down a bit before adding in the other ingredients.
  • Next, add in the salt, pumpkin pie spice, oats, oil, and maple syrup.Mix in the food processor until well combined and the mixture forms a dough.
  • Using a cookie scoop, scoop the dough onto the parchement lined baking sheet.
  • Roll the dough into balls using your hands, and place the baking sheet in the freezer for at least 30 minutes.
  • Store in the freezer in an airtight container for up to 3 weeks.

Notes

I like these best straight from the freezer.  They can also be eaten as is or from the fridge.
