This Crunchy Cabbage Salad with chicken and blueberries is one of my favorite meals. It’s so fresh tasting, has loads of healthy ingredients, and is really filling.

Asian cabbage salads are traditionally made with ramen noodles, but I like to leave them out because they contain gluten, and they really aren’t good for you anyway. I don’t miss them at all! I think you’ll prefer this cabbage salad ramen free recipe too!
Crunchy Cabbage Salad Ingredients:
For the salad
Green cabbage – The star of the show in this cabbage recipe. You can shred it or just use a knife to slice it thin – which is how I prefer it.
Cooked chicken – Just plain chicken seasoned with salt and pepper is perfect for this recipe.
Green onions – Adds a bitter flavor to round out the sweetness of the fruit.
Canned mandarin oranges – A staple in Asian cabbage salads. I like to add a splash of the juice into the dressing.
Blueberries – I love the combination of the mandarins and the blueberries. Together they’re the perfect sweet combo for this crunchy cabbage salad recipe.
Chopped almonds – You can use slivered almonds if you’d prefer. Almonds add the perfect healthy crunch!
For the dressing:
Avocado oil – The perfect base for this crunchy cabbage salad dressing. You can use any neutral tasting oil you’d like.
Apple cider vinegar – Gives this salad the perfect amount of tang.
Sea salt – Brings out all the flavors of the dressing.
Pepper – Adds a hint of spice.
Onion powder – Helps to season the dressing and adds more flavor.
Garlic powder – Adds a bit of garlic flavor to the dressing.
How To Make Crunchy Cabbage Salad With Blueberries
First, prepare all the ingredinets by chopping them up to their ideal size. Slice the cabbage into long thin strips, dice the chicken, roughly chop the almonds, and thinly slice the green onions.
Next, drain the mandarins and add them to a large bowl with the shredded cabbage and other salad ingredients.
Finally, make the dressing by whisking together the oil, vinegar, salt, pepper, onion powder, and garlic powder.
Pour the dressing over the salad and mix until well combined.
Store any leftovers in the fridge for up to 5 days.
Crunchy Cabbage Salad – Notes
Cabbage is fairly inexpensive and adds a delicious crunch to any dish.
It can also be steamed or roasted! It’s high in fiber, potassium and vitamin k. It’s used a lot in salads and coleslaw recipes.
It has a mild flavor which pairs well with other ingredients. It’s the perfect addition to a healthy lifestyle.
This blueberry cabbage salad recipe is extremely forgiving. Feel free to adjsut the quanities of each ingredient as needed. I love adding extra green onions and almonds to mine!

Ingredients
For the Salad
- 4 cups chopped green cabbage
- 3 cups cooked diced chicken about 3 breasts
- 1/2 cup sliced green onions
- 1/2 cup chopped almonds can substitue slivered almonds
- 1 15 oz can mandarin oranges
- 1 heaping cup fresh blueberries
For the Dressing
- 1/2 cup avocado oil can sub any neutral tasting oil
- 1/4 cup apple cider vinegar
- 1/4 teaspoon sea salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon ground pepper
