Almond Flour Peanut Butter Cookies – Ingredients
Blanched almond flour – (Not almond meal). You can find almond flour pretty much everywhere these days. Check your local grocery store or you can purchase it online at Amazon.
Creamy peanut butter – I recommend using natural peanut butter as conventional peanut butter has additives like inflammatory oils and preservatives. These ingredients are not only toxic to the body but they will change the consistency of the cookies.
Avocado oil – you can sub melted coconut oil if you prefer.
Pure maple syrup – adds the perfect amount of sweetness.
Egg – needed for texture and bringing all the ingredients together.
Vanilla extract – adds a subtle vanilla flavor that’s the perfect complement to the peanut butter.
Sea salt – the salt in these cookies really brings out the peanut butter flavor!
Baking soda – gives these cookies a little rise.
Chocolate Chips – optional, but highly recommended!
Almond Flour Peanut Butter Cookies – How To Make
First, preheat the oven to 350℉.
Then, line a baking sheet with parchment paper. I love this parchment paper because it’s unbleached and non toxic.
In a mixing bowl, combine the egg, oil, maple syrup, vanilla, and the 1/2 cup peanut butter.
Next, add in the almond flour, sea salt, and baking soda and stir until a dough is formed. .
Fold in the 1/2 cup chocolate chips until well incorporated.
Next, scoop the cookie dough onto the lined baking sheet, using a 1 1/2 inch cookie scoop.
Gently flatten the cookie dough before placing in the oven. Bake for 10-12 minutes until the edges are golden brown. The amount of time will depend on your oven.
Remove the peanut butter almond flour cookies from the oven and let them cool on the pan until they reach room temperature.
They will continue to set up as they cool. Who says gluten free cookies can’t be amazing?!

2) Use salted, creamy peanut butter with no additives.
3) Use a 1 1/2 inch cookie scoop.

Almond Flour Peanut Butter Cookies – FAQ’s
Q: Are all almond flour cookies gluten free?
A: No, not necessarily. While almond flour itself is naturally gluten free, that doesn’t guarantee that the other ingredients in the cookie recipe are gluten free. So to be safe, you’d want to check each individual ingredient.
Q: What does almond flour do to cookies?
A: Almond flour adds a nice rich flavor to cookies, while also adding a nice soft texture.
Q: Can you substitute almond flour for regular flour when making cookies?
A: I wish this was a simple yes, but it’s more complicated than that. Unfortunately almond flour doesn’t substitute 1:1 in recipes. So while it may be substituted, some experimentation would have to take place in order to find the proper ratio of almond flour.
Q: Are cookies made with almond flour better for you?
A: Not necessarily. However, most, but not all, bakers using almond flour are also avoiding gluten, dairy, and refined sugar. So for these reason they would be a better choice than one filled with inflammatory ingredients.

Ingredients
- 1/2 cup creamy salted peanut butter
- 1/3 cup avocado oil can sub melted coconut oil
- 6 tablespoons pure maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 3/4 cup almond flour
- 1/2 teaspoon baking soda

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, combine the peanut butter, oil, egg, maple syrup, and vanilla extract and whisk until well combined.
- Add in the almond flour, baking soda, and salt and mix until a dough is formed.
- Mix in the chocolate chips if using.
- Using a 1 1/2 inch cookie scoop, scoop the dough onto your lined baking sheet.
- Bake the cookies for 10-12 minutes until the edges are golden brown. *11 minutes was perfect in my oven but all ovens vary.
- Leave the cookies on the pan to cool. Enjoy!
