These Almond Flour Lemon Cookies are made with fresh lemon juice and pure maple syrup for a delicious and bright tasting dessert.
This lemon cookie recipe has only 7 ingredients. I love recipes with only a small amount of ingredients. They come together in no time at all, just like these banana bread cookies.

These lemon almond flour cookies are made with healthy ingredients and are totally guilt free! They remind me a bit of lemon crinkle cookies because of how the tops turned out.
If you need these to be keto lemon cookies, you can try to substitute the maple syrup for keto maple syrup, but I haven’t tried it and can’t guarantee your results.

Almond Flour Lemon Cookies – Ingredients
Almond flour
Tapioca flour
Baking powder
Salt
Lemon juice
Pure maple syrup
Lemon zest
Avocado oil (can sub coconut oil)
Almond Flour Lemon Cookies – How To Make
Combine the dry ingredients – the almond flour, tapioca, salt, and baking powder and whisk until well combined.
Add in the lemon juice, lemon zest, avocado oil, and maple syrup and mix until a wet dough is formed.
Use a 1.5 tablespoon cookie scoop to scoop the dough onto a parchment lined baking sheet.
Bake in a 350℉ oven for 11-13 minutes.
Allow the cookies to cool on the pan before eating.
Almond Flour Lemon Cookies – Tips
I love these gluten free lemon cookies as is, but if you want to add a lemon glaze you can try the glaze from my lemon poppy seed muffin recipe. It’s powdered sugar free and has a great lemon flavor.
The bottoms of these cookies will brown, but they shouldn’t look or taste burnt.
These cookies are super soft but won’t fall apart. If you find they fall apart, they probably needed another minute or two in the oven.
If you use something other than a 1.5 tablespoon cookie scoop, you will need to adjust the bake time accordingly.
Unfortunately, almond flour desserts soften over time due to the high oil content of the almond flour. I recommend eating these cookies the same day they’re baked for best texture.

Ingredients
- 1 1/2 cups almond flour
- 1 tablespoon tapioca flour
- 1 teaspoon baking powder
- 1/8 teaspoon sea salt
- 1/3 cup pure maple syrup
- 3 tablespoons fresh lemon juice
- 2 tablespoons avocado oil can sub melted coconut oil
- 1 packed teaspoon lemon zest about 2 lemons
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine the almond flour, tapioca, salt, and baking powder in a medium sized mixing bowl and whisk to combine.
- Add in the lemon juice, lemon zest, avocado oil, and maple syrup and mix until a wet dough is formed.
- Use a 1.5 tablespoon cookie scoop to scoop the dough onto a parchment lined baking sheet.
- Bake in the oven for 11-13 minutes and let the cookies cool on the pan.
